Apple One is a media bundle
Apple One combines Apple Music, Apple TV+, Apple Arcade and iCloud+ storage, with higher tiers adding further services. Its value depends on whether you would pay for those services individually. If you already pay for Apple Music and iCloud+, the bundle is often cheaper than the separate subscriptions; if you would never open TV+ or Arcade, the discount is paying for things you do not use.
Google One is storage first
Google One expands the storage shared by Gmail, Drive and Google Photos. Its higher tiers add Gemini features across Google apps. It contains no music or video service.
The deciding question: where do your photos live?
The largest storage consumer for most households is the photo library. If it lives in iCloud Photos, iCloud+ — and therefore possibly Apple One — is the storage you need. If it lives in Google Photos, Google One is. Keeping the library in both places is how people end up paying twice.
